As a dairy cow approaches the natural retirement of her career as a milk producer she has historically been sold to the commodity market and can end up in a variety of different places and products.  This often ignoble end is only worth mentioning as there is another philosophy and a different path.   From the shores of Galicia to the tundra of Sweden to our unit in Cranborne, there is a practice to elevate the dairy cow into improved cuts of meat.  This produce is sought after by Michelin starred chefs and starry eyed cooks alike and allows for our dairy cow to enjoy a lifespan of up to 5 or 6 times longer than conventional beef.  With grass fed diets and freedom to range, our ladies are anything but conventional.
