A Goliath of meat cuts. This cut is the porterhouse and is a showcase of beef: fillet on one side and sirloin on the other. Perfect for the grill, we have 2 ages available. Our first, aged just over 42 days, benefits from both the salt room by it's tenderness and flavour. On our 100 day aged offering, the flavour profile takes on more nuance with added contrast in flavour between the fillet and the sirloin. The consistency is tender without too much slack.
